Poblano Corn Salad
An early summer side dish to accompany any number of grilled meats or to be eaten on its own.
Ingredients
- 6 ears Corn, grilled and stripped
- 5 Poblanos, roasted
- 3/4 cup Pepitas
- Juice of one Lime
- Salt
- Pepper

- Toss together, chop when necessary, season to taste. Eat warm or cold. Or room temp.
