Poblano Corn Salad

An early summer side dish to accompany any number of grilled meats or to be eaten on its own.

Ingredients

  • 6 ears Corn, grilled and stripped
  • 5 Poblanos, roasted
  • 3/4 cup Pepitas
  • Juice of one Lime
  • Salt
  • Pepper

  1. Toss together, chop when necessary, season to taste. Eat warm or cold. Or room temp.
